Chef Jason’s Favourite Pasta Dinner

This might be my favourite meal! I actually eat this probably once a week. It is easy, delicious and not overly expensive. The more sauce you add the more nutritious the meal is for the kiddies too. I use this sauce for pasta but it is also great as a sauce for meat, fish and roasted vegetables. Hopefully, this sauce becomes a staple in your home recipe book as well.

Tomato Sauce:
2 thinly sliced onions
4 cloves of minced fresh garlic
6 cups rough diced ripe tomatoes or 2 cans of chopped Roma tomato
½ cup lightly packed fresh torn basil leaves
1 teaspoon kosher salt
1 tablespoon olive oil
Dry or fresh pasta to feed 4

Chopped fresh basil, parsley or chives
Olive oil for drizzling
Pinch of kosher salt to season and fresh ground black pepper
Grated parmesan cheese or other hard cheese


Make the Tomato sauce:
In a 4-6 liter saucepan, gently cook the onion, garlic and basil in the olive oil until tender, over low-medium heat for about 5 minutes. Add the tomatoes, bring to a simmer and gently cook for 20 minutes or until you have a delicious tomato basil sauce.

To serve:
Cook the pasta in salted water until al dente using the cooking time suggested on the pasta box. Drain and toss with the tomato sauce. Drizzle with more of the olive oil, add more chopped herbs, grated cheese and enjoy! Sometimes my kids ask for some garlic bread with this. Add a simple salad and you have a great meal!
